As you might know, watermelon is one of my favorite seasonal foods. I try to work it in whenever I can. So when I was gifted a beautiful yellow watermelon at the Farmer’s Market I knew I had to make a great recipe I could share with you guys. This light and savory gazpacho is so easy to make and has the perfect balance of sweet and salty to make your taste buds very happy. I of course threw in a few of my favorite superfoods and medicinal herbs to make it even more vibrant and healthy.

1 whole watermelon seeded and finely chopped. (6-8 cups)
1 med cucumber peeled and finely chopped
2 med tomatoes finely chopped
½ red bell pepper finely chopped
¼ cup finely chopped basil
¼ cup finely chopped parsley
2 TBSP olive oil
2 TBSP balsamic vinegar
2 pinches salt
2 grinds black pepper
Mix all ingredients in a large bowl and then scoop 3 cups into a blender. Blend on high until smooth and pour into new bowl. Blend another two cups on high and pour into same bowl. Add remaining chunky mixture to bowl and stir. Serve cold or at room temp and top with avocado slices.
