Make Your Own Raw Vegan Pumpkin Pie

 

RAW VEGAN PUMPKIN PIE with WHIPPED COCONUT CREAM

Crust:

2 cups walnuts

1/4 cup raw shelled pumpkin seeds

2 cups medjool dates

1/2 cup flax meal

1/2 cup shredded coconut

Pinch of renew pantry ancient mineral salt

 

Pie filling:

1 sugar pumpkin, peeled, seeded and cubed (about 6-7 cups)

2 cups activated raw cashews preferably soaked overnight or 4-8 hours

1/2 cup melted coconut oil

3-4 TBS Renew Pantry Coconut Manna

I/2 cup coconut nectar or other preferred sweetener

2 TBS Unrefined Maple syrup ( optional)

4TBS Renew Pantry Ceylon Cinnamon

2 TBS Renew Pantry Turmeric

1 -2 tsp each of nutmeg, ginger and ground cloves

1 tsp ground cardamom and black pepper

To make the crust:

Pulse the walnuts in a food processor until they're crumbs, add dates, coconut , flax , salt and process until it begins to stick together. If needed , add coconut oil . When a sticky dough forms : Press into a coconut oiled pie dish or springform pan and put in the fridge.

To make the filling:

Blend all the ingredients until smooth, adding spices and tasting to desired flavor. Your pumpkin may vary in moisture level : add more coconut oil and or a tablespoon of filtered water to desired consistency . Let mixture and spices rest for a true blending and marriage of flavors for 30 mins in a bowl in the fridge.  Add in 1 tsp of the Renew ancient mineral salt.  Spread into your crust and refrigerate or freeze overnight until it's set. Slice and serve with whipped vegan cardamom infused coconut cream, cashew cream or your fave vegan ice cream!

Coconut Cardamom Whipped Cream

2 cups first pressed full fat cold coconut cream (no guars or carrageenan)

We like Zuma Valley

2 TBS Renew Pantry Raw Honey or sweetener of choice

Pinch of ground cardamom or a drop of cardamom oil

Whip with hand mixer or in high powered blender until fluffy white clouds. You may choose to add Renew Pearl Powder for a beauty boost ! Enjoy!
