Healthy Superfood Pancake Recipe

I’m not a fan of big complex breakfasts. They just don’t sit well in my stomach and seem to slow me down for the entire day.  But, I’ve had a serious craving for pancakes lately. When I shared this craving with my fiancé he sweetly googled a healthy pancake recipe. The recipe we landed on has two ingredients, just eggs and banana. Sounds too good to be true, but I assure you it’s not!  I of course saw the opportunity to superfood this recipe to make it truly nutritionally dense and want to share that with you!  This healthy pancake recipe is so incredibly easy and the taste is truly amazing.

INGREDIENTS:

1 serving:

2 eggs

1 ripe banana

¼ tsp Renew Astragalus

¼ cup fresh halved blueberries

1 Tablespoon Renew Bee Pollen

  

DIRECTIONS:

Mash bananas in a large bowl.

Whisk in eggs and Astragalus.

Once well whisked lightly stir in blueberries and bee pollen.

Melt coconut oil on medium in a flat pan.

Add batter and cook each side until browned and cooked all the way through (about 45 seconds on each side).

Eat while warm and top with Renew Coconut Manna and Maple Syrup.
